when summer time rolls around, there’s nothing that hits the spot quite like an ice cream cone. after playing around a little with an online recipe for pineapple whips, we’ve got a winner!
i might have had 3 cones in one day, but don’t tell my kids………
3 1/4 cups pineapple juice – divided
1 cup sugar
1 tsp. vanilla
1 1/2 cups heavy whipping cream
Heat 1 cup of pineapple juice and sugar to a boil. Remove from heat. Add remaining pineapple juice and vanilla; chill.
When ready, add cream to pineapple mixture and pour into prepared ice cream maker; (I have a 2 qt. electric Cuisinart ice cream maker) freeze according to directions. When the ice cream is done, you can serve it right up, eat it right up, or put it in the freezer for latter – or both.
