pumpkin cookies – anything that involves icing is sure to elicit many volunteers for kitchen help
Gingerbread Cookies (I usually double this; if so, it takes a little more than one jar of molasses)
1 cup butter
1 cup sugar
cream together thoroughly
1 cup molasses
Heat to almost boiling. Pour over butter mixture
1 Tablespoon vinegar
Mix in well. Cool to Lukewarm
1 egg
Add
4 3/4 cups flour
2 tsp. baking soda
1/2 tsp. salt
1 tsp. cinnamon
1 tsp. ginger
Whisk dry ingredients together and add. Chill dough several hours or overnight
Roll dough to about 1/4 inch thick and cut into desired shapes. Bake at 350 for 8-12 minutes.
Icing
3 sticks butter
1/2 cup milnot or cream
1 tsp. vanilla
1/2 tsp. salt
1 bag powdered sugar
1 Tbs. karo
1-2 Tbs. hot water
mix until fluffy
